Finnish oven pancakes with strawberries

Okay, this time I'm going to bake Finnish oven pancakes, but I'm also trying a new thing - I'll put strawberries to the dough. You can use whatever berries you want or go without any berries! ☺ These are also gluten-free but you can use whatever flours you want/can.

Production time: About 45 minutes


4 dl / 1 3/4 cups of gluten-free flour (or "normal")
1,5 dl / almost 3/4 cups of sugar
1 tsp of baking powder
pinch of salt
(1 tsp of vanilla sugar)
5 dl / 2 cups of milk/water
2 eggs (not necessary)
dollop of cooking oil
(berries of your choice as much as you want)

1. Heat the oven to 225 C / 437 F.
2. Mix flours with sugar, baking powder and salt (& vanilla sugar).
3. Add milk/water, (eggs) and oil.
4. (Add berries).
5. Cover the baking tray with the baking paper.
6. Pour the dough to the baking tray and bake in the oven for about 30 minutes.
7. Take the tray off from the oven, let it cool down for few minutes and cut it to pieces.
